Oatmeal Waffles

WAFFLES!!!

A week ago we bought a waffle maker to our household. How excited we all are?! When looking up the tastiest waffle dough recipes, we decided to go for something less typical and healthy. My family is getting obsessed about healthy eating and healthier alternatives to some types of meals, such as morning smoothies, coconut milk, wholegrain and spelt flour, or simply using oats instead of flour at all.
That is why we also though of making oatmeal-flour for waffles. The dough was much thicker and we put there also whole unmixed rolled oats, but surprisingly waffles were nicely soft, fluffy and crunchy at the same time. As oats have it natural sweeter taste, we added not even one 20g of vanilla sugar. Instead of normal milk we used coconut milk, which added up on the creaminess, sweet taste and light coconut scent.
Don’t have waffle maker? What about simply making pancakes with this same recipe for the dough?

You need:
Cup mixed oats
Cup whole oats
1 pack vanilla sugar
1/2 pack baking powder
Pinch of ground cinnamon
1/3 melted butter
1-2 eggs
Coconut milk (until the dough is liquid enough to spread evenly in the waffle maker…cca. 3 cups)

After you mix all this together, just pour into the waffle maker and wait for about 5 minutes. These waffles will be thinker, therefore cooking will take longer time in order to have them crunchy. Wait until they are little bit brown on both sides.
Serve with fresh fruit, maple syrup, Nutella, coconut spread, jam, whipped cream, yogurt. For breakfast, lunch or dinner. Or simply anytime and with anything you like.
